Amazing how the sandwich restaurant industry has exploded in the past 8 years.  It’s no longer just Subway’s niche.  With so many sandwich chains to choose from (and I think I’ve tried almost all of them), my favorite sandwich by far is the chicken pesto at Corner Bakery.  Tender chicken breast, fresh arugula, sweet tomato slices on ciabatta bread with pesto mayo, it’s sandwich perfection!  Ironically, I tried this sandwich for the first time on a job interview trip all the way in northern Virginia, and when I ended up choosing a job closer to home, I was so glad to have 4 Corner Bakery locations within 5 miles of work.  Man these places are everywhere in the DFW area!  And thank goodness, because that chicken pesto is one delicious sandwich.
