Movie Night (Curry Chicken Salad)

Movie night in calls for some creative finger foods with old fashioned comfort.  No silverware necessary, totally casual.  For a Blockbuster kind of night, I chose portable foods like curry chicken salad on whole wheat pita and ants on a log (remember this old school treat with celery, peanut butter, and chocolate chips?)  Served with a semi-sweet Blanc du Bois from Haak Winery, to contrast with the spicy curry chicken and creaminess of the peanut butter.

Featured Recipe: Curry Chicken Salad

  1.  
    • 1 cup cooked chicken breast, cubed
    • 1/4 cup low fat mayonnaise
    • 1 tbsp Dijon mustard
    • 1/3 cup minced celery
    • 1/4 cup raisins
    • 1/2 tbsp minced garlic
    • 1 tsp curry powder
    • 1/2 tsp chili powder
    • 1/2 tsp ground cumin
    • Salt and pepper to taste 
    • Fresh dill for garnish (optional)

Combine all ingredients in medium bowl and mix well. 

Stuff mixture into pita pockets and garnish with dill.

Makes 4 pita pockets (as pictured, serves 2)

Shortcut: You can used canned cooked chicken (found in the same store aisle as tuna) in this recipe without tasting too much difference.

Note: Bring mints/gum!  The curry does tend to leave bad breath.
